shrimp grilled on an open fire

Since I've been talking a lot lately about my recent trip to the Oregon coast with my husband, I thought today I'd share one of the most delicious meals we ate while there; Fresh shrimp grilled over an open fire on the beach! These were without a doubt the juiciest, most flavorful seafood I've had in years. No exaggeration.

We made this dinner with one simple ingredient, shrimp. We skewered them on cooking skewers and held them over hot coals. (My best friend's husband Chris photo bombed this picture below with hot dogs, lol).

Once they turned pink and got a bit charred they were done! The charred bits were the tastiest pieces.

We simply peeled and ate these shrimp straight off the cooking skewers, possibly burning our fingers--it was worth it! But these shrimp would also be amazing dipped in melted garlic butter, or served with cocktail sauce. Next time!
