The best (dairy-free & healthy) guacamole recipe

Much respect to sports fans, but anyone who knows me well knows I am not among you. And apparently, football season is upon us. Not being a rabid football fan myself (Noah and I jokingly refer to it as "sportsball") I was almost totally unaware of the impending frenzy. Thank goodness for social media, without which I would never even realize which sports-related insanity I should be avoiding.

Nonetheless, I do like to keep some sports-gathering friendly recipes on hand for those times when we get invited to watch sportsball football with friends. At very least I usually attend a Superbowl party and enjoy the food and company! Those things I can understand. 

This guacamole recipe is something I came up with as a healthier alternative to traditional mayo-based versions. I used to use light sour cream sometimes, which is also a fantastic alternative, but this version really cuts back on anything that isn't strictly veggies and seasoning. The only fats come from the avocados, thus, healthier! And delicious. And works fantastically if you're making food for someone who is avoiding dairy.

Ingredients 

3 (very ripe) avocados 
1/3 of an onion, chopped very fine
1/4 cup salsa (I used canned diced tomatoes and peppers, which also works)
1 Tbsp of chopped garlic
1 1/2 tsp of your favorite hot sauce 
salt and pepper (to taste)

The trick to this is to make sure your avocados get really, really mashed. It also helps to use actual salsa instead of fresh tomatoes. I know! It sounds wrong somehow to advocate using non-fresh ingredients, but in this case the juice from the salsa helps turn this into really creamy guacamole. It also adds all the spices that already come with salsa, saving you time and energy. And I'm all for making healthy cooking as easy and quick as possible.
