Oh my pumpkin, am I excited about this. 

If you've been hanging around here for a while, you know I love, love LOVE pumpkin. I've already shared my recipe for paleo pumpkin almond butter cake with you, and shared my 20 inspirational pumpkin recipes to try. And stick around, I've got a pumpkin coffee cake recipe coming as well!

A galette is a simple french style free-form pastry, usually with a flaky crust and open faced to show the filling. It can be savory or sweet, though mostly I've seen some amazing dinner versions of the savory variety. I tried this recipe for a simple pumpkin pie galette on a whim. I've been seeing galettes a lot lately on Pinterest, but no pumpkin versions. It was a glaring oversight. And today I'm going to show you how I made my pumpkin pie galette, so that you can make some too!


This recipe for pumpkin pie galette is incredibly simple. I don't have time to make and roll out my own crust usually, so instead I used a pre-made pie crust. This saves you time and energy, while still cranking out an impressive looking dessert and keeping the flaky, buttery style crust.

Simple Pumpkin Pie Galette Recipe

you will need:

1 16 oz can of pumpkin puree
1 package pre-made pie crusts (2 crusts)
3 eggs
1 Tbsp cinnamon
1/2 Tbsp pumpkin pie spice
2/3 cup sugar

1. Unroll your pie crust on your baking sheet (or I used my pizza stone, which worked great!)

2. Spoon half of your pumpkin mixture into the center and spread it around evenly, like you're putting sauce on a pizza, leaving about 1-1 1/2 inch around the edges.

3. Begin folding the edges of your crust gently over the pumpkin mixture.

4. Continue folding until you've gone all the way around your crust. Make sure that any place the crust overlaps itself it's fairly sealed so no filling escapes during baking.

5. Bake at 350 degrees for 45-50 minutes, until the filling is 'set' in the middle (it doesn't jiggle and is baked through) and the crust is a light golden brown.

6. Remove from the oven, and let sit on your baking sheet until your gallette cools. If you try and pick it up too soon, it will break or crumble, trust me I found that out the hard way!

7. Once cool, slice and serve with a garnish of walnuts and maybe some whipped cream. Inhale!
