What's that you say? A squash recipe that isn't the almighty pumpkin? Yeah, I know I've been on a bit of a pumpkin kick lately, but today I'm branching out a bit I promise. 

You may remember recently that I showed you how to microwave a spaghetti squash to use as a healthy, gluten-free and paleo noodle substitute. And lord, is it ever delicious. I've even got Noah (a former noodle addict) making the switch and loving it. 

Mostly because of recipes like these! This is my absolute favorite way to serve spaghetti squash. It looks impressive, tastes amazing, and requires almost no time whatsoever.

you will need

1 spaghetti squash, cooked (see instructions here)
goat cheese
green onions-two or three stalks is fine
1.5 Tbsp pre-chopped garlic (the kind in a jar)
mushrooms-1 package
fresh basil leaves (optional, but delicious) 
1 Tbsp extra virgin olive oil
salt and pepper to taste

Seriously this part feels so redundant, because, you know, all that's in the title....

...but I digress!

The process

In a pan, heat your olive oil over medium heat. Add your mushrooms and chopped garlic and saute for about 5-10 minutes, until your mushrooms are a bit cooked and the garlic is a golden brown color.

When your mushrooms and garlic are done, pour them over your spaghetti squash "noodles" and toss to coat everything evenly.

Crumble your goat cheese over your noodles, and let it sit a minute so it gets good and melty. Finely chop your green onions and basil and sprinkle them over everything. Salt and pepper to taste, and you're ready to eat!

This is just the first of what will be many posts on the way we eat our spaghetti squash in our house! Noah and I seriously have it in some form at least once a week, so we get creative with it let me tell you. Check back soon for more!

  13. I've never had spaghetti squash but after seeing this recipe I really want to track it down. I don't think that will be possible until Autumn in Australia though! I'll pin this recipe so I can try it then.
