Yo, has anyone else realized that it's Halloween this weekend? That kind of...snuck up on me. Noah's Mad Max: Fury Road costume is done, but I still have a host of other small side projects to do before this Saturday, yikes.
This recipe thought, is in honor of not just Halloween but Thanksgiving, and fall in general. It's no secret I've been obsessing about pumpkin everything. Pumpkin galette, paleo pumpkin cake...it's one of my favorite times of year. This pumpkin recipe, in contrast, contains no actual pumpkin. What, you say? No actual pumpkin?
Well last time I was at Wal-Mart (I know, I know, the devil...) I found both pumpkin pie spice chips (like chocolate chips) and pumpkin pie spice marshmallows. Um...both of those things came home with me in multiple, and I knew exactly what I was going to make: Candy Pumpkin Pie Spice Rice Crispy Treats! Today I'm sharing the recipe to make your own, just in time for Halloween weekend.
6 cups of crispy rice (a bit less then a full box)
1 bag of pumpkin pie spice marshmallows **
1 bag of pumpkin pie spice chips
4 Tbsp (1/2 stick) of butter
1 large pot
1 9 x 9 square glass baking dish, greased
**If you can't find these marshmallows, you can always use 1 Tbsp pumpkin pie spice and a bag of regular marshmallows.
1. Melt the butter in the bottom of a large pot.
2. Add marshmallows, and stir constantly until melted. Then add pumpkin pie spice chips and stir until incorporated.
3. Add rice crispies and stir until completely coated with the marshmallow/candy mixture.
4. Pour your mixture into your 9 x 9 pan and spread around evenly, pressing down to help compact your treats. Let cool and eat!
