Happy Monday everyone, welcome to October!

Around here, we eat vegetarian fairly often. I'd say I aim for about an 80/20 split in favor of eating vegetarian for my family. I've already shared my recipe for roasted veggie pitas with creamy avocado spread, as well as a family favorite; curried cauliflower steaks. And I can't forget Noah's new love, spaghetti squash with creamy goat cheese and mushrooms

Today I'm really excited to be sharing this recipe for southwest veggie burgers with you! I've been trying for quite some time to make a good, hearty homemade veggie burger, because we buy them and eat them fairly frequently, and they're expensive! I've tried a few recipes but they always seem to fall apart, or not have a good meaty consistency. But I finally nailed it! And man, these mildly spicy, flavorful burgers are amazing and easy to make at home, and have a great consistency! Are you ready to make your own?

you will need:

3 cups cooked rice (the rice works best if it's a bit dry. Either overcook it a bit in the rice maker, or leave it to sit in the fridge for a while. Or use leftover rice!)
1 Tbsp tomato paste
1 tsp taco seasoning
1/2 tsp cumin
1/2 tsp garlic (you can also use two or three cloves of chopped fresh garlic)
1/4 red onion, finely chopped
1/4 green pepper, finely chopped
1/8 cup black beans
1/8 cup chopped cilantro
1/8 cup shredded cheddar cheese (or pepperjack, for some kick!)
1/4 cup flax seed meal (this isn't necessary, but helps bind and add protein and fiber)
6 eggs
salt and pepper to taste
extra virgin olive oil for frying

*makes about 6-8 patties

the process

1. In a large mixing bowl, mix your rice, all your ingredients except for the eggs. Stir well to make sure the rice and veggies are evenly coated in the spices.

2. Mix in your eggs, and stir well. You want to make sure everything is evenly coated in egg. You also can't let this mixture just sit while you're cooking either, or all the egg will sink to the bottom and you'll get burgers that are falling apart! Just give it a good mix every few minutes. 

3. Coat a large frying pan with a thin coat of extra virgin olive oil, and heat to a medium heat. 

4. Scoop your mixture onto the pan in little burger sized pancakes. Let cook completely on one side and set in the middle, then flip and cook the other side. Congrats, you made veggie burgers!

I like to serve these with slices of pepperjack cheese and mashed avocado, fresh onions and maybe a dash of hot sauce. They were a huge win. Each one of these burgers was filling and hearty enough that it was impossible to eat two! 

These patties also keep in the refrigerator really well for up to 10 days, or you can freeze them for around two months. I've taken to making a big batch of these and freezing them so I can use them as needed, just like the store bought versions. Except much, much cheaper! I'm excited to try different versions of my favorite meat patties with this recipe!
