Since Noah and I decided to experiment with eating a paleo diet, the one thing he has missed the most has been banana bread. The man loves his banana bread. Before eating paleo we made it probably once every two weeks, sometimes more. He would eat half a loaf slathered in butter.
Obviously, we can't really do that any more. What with eating grains and refined sugars not being on the paleo approved list.
But after making my paleo pumpkin pecan bars last week, I knew I could come up with something that would make him happy, and I did! These pieces of paleo banana heaven are soft, chewy, and full of banana flavored goodness. And today I'm sharing my recipe for paleo banana bread with you!
Paleo Banana Bread Recipe
Ingredients4 ripe bananas
2 tsp baking soda
3/4 cup of creamy almond butter
2 tsp vanilla
1 Tbsp cinnamon
1/2 cup honey or maple syrup
*optional: 1 Tbsp flax seed meal or coconut flour*
instructions:1. Grease an 8x8 or 9x9 pan with cooking spray, and set aside. Preheat your oven to 350 degrees.
2. In a mixing bowl, mash your bananas and whisk in your almond butter, eggs, vanilla and honey. Add in your cinnamon, baking soda and flax seed meal and/or coconut flour. Those last two are optional, but a little coconut flour or flax helps add fiber and a bit of 'bread' texture.
3. Bake your banana mixture for 30 minutes, or until set. Pull out of the oven and let sit for fifteen minutes, then cut up and enjoy! Seriously, stuff your face. These lasted about ten minutes in my house and everyone burned their tongues eating them before they were cool. Delicious, but boiling-lava hot!
