So Noah and I have have been eating paleo for about the last two weeks, and the thing I've missed most is baking. I really like baking! Also pumpkin. I had to get rid of boxes of pumpkin goodies when we started this. Ever seen a grown woman cry over a box of granola bars? Yeah...Noah has. 

But have no fear, as is evidenced by my paleo pancakes recipe, paleo baking is something I've taken to mastering pretty darn quickly! And today I'm going to share my favorite recipe so far, paleo pumpkin pecan breakfast bars! Gluten-free, grain-free, paleo and healthy. What's not to love!

This pumpkin pecan bars recipe are originally based on the paleo pumpkin bars recipe from HummusSapian. I changed a few things to make them less brownie-like, and more cakey and granola bar-like. They turned out A-Maze-ing. Get ready to make some and put them in your own faces!

Paleo Pumpkin Pecan Bars Recipe

Ingredients: 


  • ¾ cup creamy almond butter
  • ½ cup pumpkin puree
  • 1 medium banana, mashed
  • ¼ cup pure maple syrup (or honey!)
  • 2 tsp vanilla extract
  • 1 tbsp coconut flour
  • 1 cup shredded (unsweetened) coconut
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 2 eggs
  • ¼ tsp salt
  • ⅓ cup pecan pieces
  • *optional* 2 Tbsp flax seed meal
  
  **for garnish** 
  ¼ cup of shredded coconut
  ⅓ chocolate chips


Instructions:

1. Preheat oven to 350 degrees. Grease an 8 x 8 or 9 x 9 baking dish with cooking spray.
2. Add your almond butter, eggs, pumpkin, banana, maple syrup and vanilla and whisk until smooth.
3. Mix in the rest of your ingredients and stir until fully combined.
4. Pour your mixture into your prepared baking dish, and spread it out evenly with a spatula. Bake for 30 minutes.
5. Remove, and let sit at least ten minutes to let it congeal. Cut up and serve! Prepare another batch because these will be gone before you know it.
