So, ever since Noah and I started eating paleo, I've been having massive sandwich cravings. It doesn't matter what kind, peanut butter and jelly or roast beef and Havarti....I've been jonesing something fierce for a sandwich. It was tolerable, until one day I had a hankering for an egg salad sandwich, and I knew I was a goner unless I could come up with a paleo substitute. Thankfully, I'm an inventive girl! Today I'm sharing my paleo egg salad recipe with you all, too!
So with a little tweaking and the help of a very ripe avocado, I managed to make a really dang good egg salad that was dairy free! Not only that, but once I took a bite, I knew I'd be able to beat that sandwich craving. Check it out!
Ingredients3-4 hard boiled eggs, peeled and diced, yolks set aside
1 ripe avocado, mashed
1/2 Tbsp stone ground mustard
2-3 Tbsp of pickle juice
1/4 cup of diced pickles
1/8 cup of diced onions
1/4 tsp paprika (for garnish)
salt and pepper to taste
Process1. In a bowl, combine your egg yolks, avocado, mustard, pickle juice, salt and pepper. Mix with a fork until smooth and creamy.
2. Add in your eggs, onions and pickles. Sprinkle with a tad more salt and paprika. Serve!
You can eat this delish salad either with just a fork or spoon, but I served it with sweet potato chips for some crunch and texture. It was amazing! It totally killed my craving for an egg salad sandwich, and I couldn't even finish my own serving.
