Well, is anyone else hungry now?

I'm going to share this amazing paleo crepes recipe with you all today, but I'm going to do something a little different. My lovely husband was actually the one who made these soft, flexible, chewy crepes, and so I can't directly take credit for them, much as I'd like to. Since he's the mastermind behind them, I'm going to have him write up the process. Don't worry though, the recipe is forthcoming! Hi guys! Noah here. So, I've never been much of a cook.  I had only developed the most primal of broke-college-student cooking basics until Jessica recruited me as a sous chef (great way to get some extra family time!) and I recently started picking up enough skills to work relatively unsupervised.

Paleo cooking has given us a lot of new recipes and new challenges for replacing common staples, and one of the things we've really been missing has been a convenient bread/tortilla replacement.  Lettuce wraps are great but just aren't flexible enough to support some ingredients; this delicious recipe can be made sweet or savory to work as a tasty crepe or a very convincing tortilla.

Paleo Crepes Recipe

  • 8 eggs
  • 1 cup arrowroot powder
  • 1 cup water (or coconut milk)
  • 3 Tbsp honey
  • 2 tsp vanilla
  • 4 tsp oil (preferably coconut, but any oil works)
  • 3 tsp coconut flour

1. Whisk all the ingredients together in a large bowl, adding the coconut flour and honey last to taste.  You want a pretty liquid mixture, sweet to the taste.

2. Preheat a frying pan to medium heat with a light coating of canola oil.  Ladle the mix into the pan and spread it thinly so it barely covers the bottom.

3. Rotate until the top is solid, there should be no liquid remaining after 5-10 seconds.  Cook until the bottom is lightly browned, then flip and repeat.
