Especially when juicy rare top sirloin is involved. In this case, the top sirloin in question happens to be rubbed and crusted in yellow curry powder.

I spend a lot of time cooking for my family, most of it after a busy day of work. But like I mentioned when I gave your guys my favorite 7 Ideas for Date Nights In, when I make dinner just for my husband and I, I really like to go all out and make us something truly gourmet. Lately I've been working on this recipe for curry-crusted top sirloin steaks over spaghetti squash stir fry for about a month. And by "working on" I mean "repeatedly making it over and over again because it's amazing and I love steak. Plus: steak." 

I'm excited to share finally share this recipe with you, my awesome readers, because this dish is glorious.  The combination of the creamy, savory peanut sauce with the tender juicy steak and crispy stir-fried spaghetti squash combine to make truly something extra impressive and delicious. This is a meal you want to sit down together and truly savor! I know, because in the last month I've sat down and savored it about four or five times...

Curry Crusted Top Sirloin over Spaghetti Squash Stir Fry


But first! How to turn your spaghetti squash into noodles:

1. Take your spaghetti squash out (and remove the sticker)

2. With a very sharp knife, cut your squash in half width-wise, not length wise. This creates the longest 'noodles.'

3. Scoop out the seeds from the center of your squash.

4. Place your halves cut side down on a plate, and microwave until your squash is soft and your noodles begin to separate, about 7 minutes on high. 

5. Carefully remove your noodles from the squash skin, using a fork. As long as you work carefully they should come apart in nice, long noodle pieces that are somewhat firm.

6. Pile your noodles onto a plate, and set aside for cooking your stir fry.


And now, on to the recipe...

you will need:

1 spaghetti squash
2 top sirloin steaks
4 Tbsp curry powder
3-4 sweet small peppers
1 package of mushrooms
Broccoli and carrots, sliced into spears
1 bunch green onions
2 cups bean sprouts
2 Tbsp sesame seeds
3 Tbsp soy sauce
1 bunch of garlic, peeled and minced
3 Tbsp extra virgin olive oil

For peanut sauce:

1 cup peanut butter (chunky)
1/3 cup chopped peanuts
1 cup of soy sauce
1 cups water
1 bunch of garlic, peeled and chopped
1 Tbsp curry powder
1/2 Tbsp Garam masala

First, you're going to rub your steaks with the 4 Tbsp of curry powder. This is easy to do, simply sprinkle your steaks with the curry powder and rub them in until they're coated evenly. Heat your grill to high and set your steaks on about five minutes on one side, wait until you see them start to sizzle and then flip them.

While you're waiting for your steaks to finish, prep your pan for your noodle stir fry. I used my favorite Calphalon Signature™ Nonstick 12-inch flat-bottomed wok (from Bed Bath and Beyond). This thing is pretty amazing, and comes with a full lifetime warranty, and frankly quality pans have made a huge difference in the quality of my cooking these kinds of dishes. I can use almost no oil, which is huge when it comes to keeping these meals low calorie and healthy as well as delicious! Plus, I've been wanting a good quality wok forever. This thing is practically my third child.

If you want/need to, add a tiny bit of extra virgin olive oil to your pan and warm it up to high heat. Toss in your mushrooms, peppers, carrots, broccoli and bean sprouts, and stir them a bit to get them started browning.

Add your spaghetti squash noodles, and toss with your soy sauce garlic. Let them sit to fully crisp on one side, then stir to make sure it gets cooked through. Your veggies should be cooked but still crisp!

While your spaghetti squash stir fry is cooking, in a small pot over medium heat, you'll mix all your ingredients for your peanut sauce. Be warned, this sauce is amazing. It's good enough that we use it as a salad dressing. A marinade. And there may have been a time or two we were tempted to drink it straight!

Let your peanut sauce simmer and your peanut butter slowly melt, until it's fully combined.

Serve your steaks sliced thin, garnished with green onions and drizzled with peanut sauce on top of a bed of your spaghetti squash stir fry, and prepare to sit down and relax and enjoy a meal worth savoring!
