Cook: purple mashed potatoes recipe, the perfect paleo Easter side dish!

So the thing we've missed since starting to eat 80/20 paleo? Potatoes. This is Idaho after all. We do potatoes like no one else (we even make them out of ice cream...), and we both loved us some mashed, baked or french fried goodness. It was quite a switch, and my kids were mad. They love baked potatoes!

One way we're really tried to get my kids on board is making paleo dishes fun. These purple sweet potatoes were the perfect dish for them! I mean, come on, they're freaking purple! They're the perfect color compliment and side dish for Easter, and they're still paleo!

First of all, these are purple sweet potatoes, a slightly different style then we're used to seeing at the grocery store. I chopped these bad boys up into about 1 inch cubes, and threw in my last yellow sweet potato as well. 

After that, it was simple!

The trick to making sweet potato mashed potatoes is to go sweet or go home. And by home I mean savory as hell. I like my mashed potatoes savory, so I added onion and fresh garlic to mine in order to really bring out the savory notes and add some flavor. It turned out amazing! They're creamy and filling, but still savory and salty and delicious. 

Purple Paleo Mashed Potato recipe


2-3 purple sweet potatoes (you can usually find these at 'specialty' stores like Whole Foods)
1 yellow sweet potato
6 cloves of garlic, peeled
1 onion, peeled and chopped small
4-6 Tbsp of extra virgin olive oil
salt and pepper to taste


1. Skin your potatoes and chop then into about 1 inch cubes. Put them into a large pot, and add your whole garlic cloves, and chopped onion. Fill the pot with water.

2. Boil your potatoes until they're fork tender, then drain them. Add your olive oil and mash thoroughly. Salt and pepper to taste, and you're done!

I hope this dish makes your paleo-friendly Easter a bit easier (and frankly tastier) this year! It's so nice to be able to make a dish like 'mashed potatoes' and not have to worry about allergies or special diets! Plus, how cute will this look on an Easter themed table? Perfect right?
