One of the things that's hardest to get used to when eating paleo, or healthy in general, is the lack of snack foods. I'm going to be honest, there are only so many times you can eat baby carrots as a snack before those tortilla chips start looking reaaaally tempting. So salty. So crispy. So delicious dipped in salsa...
...but I digress. My point is that it's important to have healthy alternatives for those favorite comfort snacks. Today I'm going to show you my favorite alternative to crispy chips and cracker: Kale chips!
Kale chips, you say? That's right! You can turn Kale leaves into delicious crispy salty chips that are 100% paleo, gluten and grain-free!
Ingredients:1. bunch of Kale
2. 1/8 cup of Extra Virgin Olive Oil
3. Salt and pepper to taste
Process:1. Wash your kale (most kale comes pretty dirty if you buy it in a bunch!) and separate the leaves from the stalk. You'll want to cut them and make sure any of the tough white stem gets cut out of your bigger leaves too, that part just gets mushy and spoils your crisp when baked!
2. Evenly coat your baking sheet with the olive oil, and spread your kale leaves out on the pan. Toss them gently to get them lightly coated and then spread them out again.
3. Bake at 375 degrees for 15 minutes. And, this is important: They will not get brown! Unlike normal chips that brown as they crisp up, these chips will basically just dehydrate but retain their color. I've found that the easiest and very technical way of figuring out how done they are is to open the oven and gently poke them to see if they're crispy yet. I know, I know, I'm totally using my extra fancy cooking skills, right?
After about fifteen minutes though, you'll have hot, crispy delicious savory chips! Set them out on the counter and watch your family fight cage match style for the last couple chips. Seriously, I'm not sure who loves these more, me or my kids.
