Avocado Fries Recipe
1 cup almost meal
1 cup coconut flour
2 Tbsp arrowroot powder
1 tsp salt
1/4 cup extra virgin olive oil
3 ripe (but not too ripe!) avocados, peeled, cored and sliced into 1/2 inch slices
1. In a deep pan, heat your olive oil to medium high.
2. While you wait, whisk your eggs together in a bowl and set aside. In another smallish bowl, mix your three flours (I'm including arrowroot in that) together with the salt and pepper and mix together.
3. One at a time, coat your avocado in your egg mixture, then in your flour mixture until fully coated, and set aside on a plate.
4. Gently place your slices of avocado into your oil. Leave until until the bottom is golden brown, then flip and fry the other side. Set aside on a plate with a paper towel and repeat until you finish all your avocado slices.
I served mine with some delicious (and not paleo at all!) spicy mayo for dipping, and they disappeared. My kids loved these so much, my daughter and Noah actually almost fought each other over the last one!
