If you follow me on Instagram or Facebook, you’ll already know that or the last few months I’ve had the really exciting opportunity to partner with The Village at Meridian for their monthly Ladies' Night Out events on the first Thursday of each month. I love partnering with this local event, it’s so much fun and I always meet a ton of really interesting, friendly women!
When Debby, the head of marketing and development, told me that gourmet cooking superpower, Sur la Table, had joined our monthly event, I jumped at the chance to partner with them for the night. You guys know how much I love cooking! Combine cooking, Ladies' Night Out and sampling amazing wine with fun people? Yes please!
I was especially excited when I found out that Chef Daisy at our local Sur la Table had planned to make zoodles! In case you haven’t jumped on this food trend yet, ‘zoodles’ are spiral-cut zucchini noodles, and are a great low-carb and paleo alternative to traditional pasta. I’d never tried them before, so the first thing I did was was wolf down a sample. And then a second sample. And then a third...

They used a spiralizer attachment for a Kitchenaid stand mixer to make the zoodles, which I got to demonstrate (to endless glee, it was so satisfying to watch the zucchini turn into noodles over and over again).
The chef then sautéd the noodles for about three minutes while mixing in pesto and (brilliant move I’m totally stealing here) a dash of heavy cream. The result was a creamy, rich pesto over zucchini noodles that were DELICIOUS! I think zoodles might just replace spaghetti squash as my favorite healthy noodle substitute. I'll have to try it five or six more times just to make sure...
