Gluten-Free Sweet Cream Cheese Danish Recipe


That's right.

Gluten.
Free.
Danishes.

You heard me.


I made four different versions of this amazing breakfast treat and all four were glorious. Today I'm going to give you the basic recipe for these gluten-free danishes and then some ideas on how to customize them for your family. 

Gluten-Free Danish Recipe (OMG!)

Ingredients
For the crust:
2 eggs
2 Tbsp oil
1 tsp cinnamon
1 tsp vanilla extract
1 package of Bob's Red Mill Pizza Crust Mix.

For the cream cheese filling:
1 package of cream cheese
2 Tbsp of powdered sugar
1 tsp vanilla extract

For the toppings:
fruit of your choice

How to make them, because this is what you really want to know!

1. Prepare the pizza dough as directed on the package, but add vanilla extract and cinnamon. While it rises, preheat your oven to 375 degrees and cover your baking sheet with parchment paper.

You can totally also just grease your pan, but I've found that with gluten-free baking parchment paper works wonders.

2. Separate your dough into six balls (notice one is missing in the pictures? That's because I ate it before the pictures were taken! #shameless). Mold each ball into a small pizza-crust-like circle.

Gently press the centers so that there's enough of an indent to make sure your toppings don't escape when they get warm.

3. In a mixing bowl, beat your cream cheese, vanilla and sugar until smooth. Fill the centers of your crusts with the cream cheese.

4. Now here comes the part where you get crazy and choose your fruit. I topped these with raspberries, blackberries, chopped pineapple and apples. Just top your cream cheese filled crusts with whatever combo you like.

5. Bake for 20-25 minutes, and with as with all gluten-free pastries LET THEM SETTLE if you don't want them to crumble before your eyes. 

6. Eat them and let your taste buds rejoice.
